How to make Kē-Dough :
I love this dough. It’s so versatile. With both savory and sweet options, there’s really no excuse to get off track.
While Pinterest and Google have become my besties over the years, I also have a few bloggers that I follow for new ideas. All you have to do is search “low carb dough” and skip to the “ingredients and how to” of the articles.
First and foremost, ALWAYS bake on a surface. I prefer to use an aerated pan with holes in it to help pull out the moisture but also use parchment paper (never wax paper – they’re not the same and wax will start a fire). I add whatever seasonings I’m in the mood for, roll it out to your preference and bake until golden brown.
-For a pizza crust I roll it out (between 2 sheets of parchment – this gal can get sticky) to about ¼” thickness and then I “fork” it all over to create air holes to let moisture escape. I bake around 425 for 12 minutes. Ovens will vary so just keep an eye on it. Once it’s golden, top with your fav toppings, bake to melt and enjoy!!
-Pizza crust variations: Try adding cinnamon, sweetener and vanilla to your dough. Follow same instructions and once cooled, top with a sweetened cream cheese mixture and fruit and cut to bites. Or, top with a butter/cinnamon/monk fruit mixture and drizzle white chocolate for a keto cinnamon roll pie. This is one of my fav’s!!
-Once dough is baked and cooled, it’s ready to eat. It makes a fantastic croissant replacement too. Top it with a ranch/cream cheese mixture and a vegetable medley and you have a fantastic cold picnic veggie pizza. Yum!!
-Some folks have cut their cooked dough into slices and made club sandwiches.. the ideas are truly endless; Bagels, Quiche, Pig in a blanket, Pie crust, Soft pretzels, Pasta to name a few.
